Santa Teresa has been making quince paste in the World Heritage city of Avila for well over a century. It is made with fresh Spanish grown quince, which are peeled, poached and slowly cooked with only sugar and lemon juice.  

This is a mile away from the cheap, mass-produced quince pastes which are typically made from imported pulps, thickeners, stabilisers and preservatives.  

Fruity and slightly tannic with a firm texture. Perfect with cheese.
