Calamarata is a short tubular pasta from Gragnano, near Naples in Campania, whose wide rings resemble sliced squid (calamari) and namesake. Made under the protected Pasta di Gragnano IGP standard from Italian durum wheat semolina and local spring water, bronze-drawn and slow-dried at low temperature for a rough, sauce-grabbing texture.

How to use
