Defialy Not Quiet White 2024

Defialy (a small Victorian label whose name stands for "Don't forget I'll always love you") makes minimal-intervention wines from central Victorian fruit. The 2024 Not Quite White is a skin-contact white blend of 50% Heathcote Vermentino and 50% Mildura Falanghina, de-stemmed and left four days on skins before pressing to stainless steel. Unfined and unfiltered with just 20ppm SO2 at bottling, it pours light amber with vivid acidity and ridiculous drinkability.
