Havilah is the experimental, fun-focused label of Tasmanian winemaker Ricky Evans (Two Tonne / Woodlawn Tasmania), named after his wine bar in Launceston. This 2025 ancestral-method Pet Nat is mostly Pinot Noir with a dash of Chardonnay, part barrel-fermented for texture then bottled mid-ferment for a lively natural sparkle. Designed to be immediate, fruit-forward and delicious rather than serious.
