A characterful junmai sake from Miyako-Bijin Shuzo on Awaji Island, Hyogo. Brewed with the traditional yamahai starter and left muroka (unfiltered), nama (unpasteurised) and genshu (undiluted), it keeps every bit of its robust, umami-rich personality. Made from Gohyakumangoku rice polished to 65%.

Sweet spiced melon and apple fruit, robust umami-rich palate, clean and refined texture with a dry finish.

How to use

Serve lightly chilled or at room temperature. As a genshu it is full-bodied, so a small pour suits; a splash of water or ice opens it up.
