Olasagasti is a Basque cannery on Spain's northern coast working fresh fish from the Bay of Biscay since 1929. These Cantabrian anchovies are caught in the spring season, salt-cured and matured for months, then hand-filleted and packed in olive oil. The result is a deep, savoury, melt-in-the-mouth fillet with a long umami finish.
