Saint Albray is a French semi-soft, washed-rind cow's-milk cheese first made in 1976, instantly recognisable by its flower-shaped wheel and orange-pink rind. From the Aquitaine region near the Pyrenees, it is supple and creamy with a mild, gently buttery flavour. Aged a couple of weeks with brine washing to develop its rind and aroma.
